摘要
甘油二酯(DAG)是指甘油骨架上一个脂肪酸被羟基取代后形成的结构酯,在人体内的代谢途径与普通油脂完全不同,具有抑制体内脂肪堆积、降低血清甘三酯水平和减肥等功效,同时也是一种多功能添加剂,在食品、医药、化工等行业应用广泛。本文针对DAG的生理功效、制备与纯化工艺以及当前应用情况展开综述,分析了工业化生产DAG的可行性并作出展望,为以DAG为代表的功能性结构脂质的开发利用提供思路和参考。
Diacylglycerol(DAG)refers to the structural lipid formed after a fatty acid is replaced by hydroxyl group on the glycerol framework.The metabolic pathways of this lipid in human body is completely different from that of ordinary lipids.It can reduce weight due to its ability of inhibiting the accumulation of body fat and reducing the triacylglycerol(TAG)levels.It is also a multifunctional additive,widely used in food,pharmaceutical,chemical industry and so on.In this paper,the physiological efficacy,preparation and purification progress and current applications of DAG were reviewed,and the feasibility of industrial production of DAG was analyzed and the prospect was made,which in order to provide ideas and references for the development and utilization of DAG and other related functional structural lipids.
