摘要
以乳脂为原料,在无溶剂体系下,采用Box-Behnken试验设计对酶法(诺维信435)甘油解反应制备富含1,3-甘油二酯的改性乳脂的工艺条件进行优化。该方法利用固定化酶在无溶剂体系中反应,具有高效安全的优点。优化技术参数为:反应时间12.24 h、酶添加量6.08%、反应温度54.64℃、醇油摩尔比3.6∶1,甘油解反应后的乳脂产物中1,3-甘油二酯的含量可达49.04%。
Through the Box-Behnken experiment to optimize process of enzymatic reaction (Novozymes 435 ) glycerin solution to prepare 1, 3-diaeylglycerol from milk fat. The method uses immobilized enzyme reaction in solvent-free system with high efficiency and safe. The optimized technical parameters are: reaction time 12.24 h, enzyme dosage 6.08% , reaction temperature 54.64 ℃ , mole ratio of glycerin to milk fat 3.6: 1, the content of 1,3-diglyeerides in the product reached 49.04%.
