摘要
为了研究生长育肥猪饲粮中添加葡萄籽原花青素(grape seed procyanidins,GSPs)对半腱肌抗氧化性能及脂肪酸组成的影响,该试验选取48头体重为20.85±0.12 kg的健康杜洛克×长白×大白三元杂交猪,随机分为4组,每组3个重复,每个重复4头猪。对照组饲喂玉米-豆粕基础饲粮,GSPs组分别在基础饲粮中添加150、200、250 mg/kg GSPs,预试期7 d,正试期90 d。结果表明:(1)与对照组相比,GSPs添加组猪肌肉半腱肌pH45 min、24 h明亮度值(L*24 h)及24 h红度值(a*24 h)显著提高(P<0.05),24 h黄度值(b*24 h)以及蒸煮损失显著降低(P<0.05);GSPs添加量为200或250 mg/kg时半腱肌剪切力显著降低(P<0.05);(2)添加不同水平的GSPs均能显著提高半腱肌总抗氧化能力及谷胱甘肽过氧化物酶活性(P<0.05),添加200或250 mg/kg GSPs显著提高了超氧化物歧化酶和过氧化氢酶活性(P<0.05);(3)与对照组相比,GSPs添加量为150或200 mg/kg时显著降低了半腱肌的总胆固醇含量(P<0.05),添加量为200或250 mg/kg时显著降低了低密度脂蛋白胆固醇含量(P<0.05),饲粮添加GSPs显著提高了高密度脂蛋白胆固醇含量(P<0.05);(4)150 mg/kg和200 mg/kg GSPs组显著地提高了半腱肌单不饱和脂肪酸和多不饱和脂肪酸的含量(P<0.05);添加GSPs的各组饱和脂肪酸含量以及多不饱和脂肪酸n-6/n-3比值均显著低于对照组(P<0.05)。总之,生长育肥猪饲粮中添加200 mg/kg GSPs能提高半腱肌的抗氧化性能,降低胆固醇含量,尤其是低密度脂蛋白胆固醇含量,改善脂肪酸组成。
The experiment was conducted to investigate the effects of dietary grape seed procyanidins(GSPs)supplementation on antioxidant properties and fatty acid composition of semitendinosus in growing-finishing pigs.Forty-eight healthy crossbred pigs(Duroc×Landrace×Yorkshine)with the body weight of 20.85±0.12 kg were randomly allocated into four treatment groups,each with three replicates and four pigs in each replicate.The control group was fed the basal diet,the GSPs group was fed the basal diet adding 150,200,or 250 mg/kg of GSPs.The feeding experiment lasted for 90 days after a seven-day pre-trial period.The results showed as follows:(1)compared with the control group,the values of pH 45min,L*24 h and a*24 h of semitendinosus significantly increased(P<0.05),and the values of b*24 h and cooking loss significantly decreased in groups supplemented with different concentrations of GSPs(P<0.05).Dietary GSPs supplementation at 200 or 250 mg/kg significantly decreased the shear force of semitendinosus(P<0.05).(2)Dietary GSPs supplementation at different concentrations significantly increased the total antioxidant capacity and glutathione peroxidase activity in semitendinosus(P<0.05),and 200 or 250 mg/kg GSPs supplementation significantly increased the activities of superoxide dismutase and catalase(P<0.05).(3)Compared with the control group,GSPs supplementation at 150 or 200 mg/kg significantly reduced the total cholesterol content in semitendinosus(P<0.05).GSPs supplementation at 200 or 250 mg/kg significantly reduced the content of low density lipoprotein cholesterol(P<0.05).Dietary GSPs supplementation significantly increased high density lipoprotein cholesterol content(P<0.05).(4)The contents of monounsaturated fatty acids and polyunsaturated fatty acids in semitendinosus were significantly increased in pigs supplemented with 150 or 200 mg/kg GSPs(P<0.05).The content of saturated fatty acids and the ratio of n-6/n-3 of polyunsaturated fatty acids in GSPs supplementing groups were significantly lower than those in control group(P<0.05).In conclusion,diets supplemented with 200 mg/kg GSPs in growing-finishing pigs could enhance the antioxidant properties,reduce the content of cholesterol,especially low density lipoprotein cholesterol,and improve the composition of fatty acids of semitendinosus.
