黄粉虫热泵干燥和品质评定

摘要 为促进黄粉虫资源的开发、降低其干燥和储运成本,并提高产品品质。在不同风温、风速和漂烫时间条件下,以活体黄粉虫为研究对象,实验研究了采用全封闭式热泵干燥器对其干燥时,黄粉虫有效水分扩散系数的变化和所需活化能值,并对干燥后黄粉虫品质进行了评定,包括:外观、收缩率、复水率。结果表明:随着干燥温度、风速和漂烫时间增加,黄粉虫有效水分扩散系数越大,且其受干燥温度影响最大;所需干燥活化能(Ea)为24.75 kJ/mol与干燥前相比,经热泵干燥后黄粉虫保持了较好的形状和色泽,其复水率为57.5%、收缩率为29.18%。本研究可有效促进黄粉虫产品发展,并为相关产品的开发提供参考价值。 In order to promote the development of Tenebrio molitor resources,reduce its drying,storage and transportation costs,and improve product quality,experimental investigations were performed on the variations of effective water diffusion coefficient and activation energy of Tenebrio molitor when the Tenebrio molitor was dried by a totally enclosed heat pump dryer under the conditions of different wind temperature,wind speed and blanching time,and the quality of dried Tenebrio molitor was evaluated including appearance,shrinkage and rehydration rate.The results showed that:the effective water diffusion coefficient of Tenebrio molitor increased with the increase of drying temperature,wind speed and blanching time,and it was most affected by drying temperature;the required drying activation energy(EA)was 24.75 kJ/mol;compared with that before drying,the dried Tenebrio molitor maintained a better shape and color,with a rehydration rate of 57.5%and a shrinkage rate of 29.18%.This study can effectively promote the development of Tenebrio molitor products and provide reference for the development of related products.
