摘要
以海洋源牡蛎肽、海参肽、鳗鱼肽为可选功效成分,以维生素C (VC)、糖醇、速溶咖啡粉为辅料,研制一款海洋源复合多肽固体饮料,并对其改善性功能和抗疲劳作用进行研究。通过体内外试验,明确功效成分及最佳配比。在此基础上,以感官评价为指标,利用单因素试验、正交试验优化获得最佳配方:牡蛎肽与海参肽添加比例10︰1 g/g, VC 0.20%、糖醇65%、速溶咖啡粉7.5%。在此配方下研制的海洋源复合多肽固体饮料是一款色泽均一,无腥味、无蔗糖、无香精色素,具有独特咖啡风味,且各项指标均符合国家标准的天然功能食品。此外,活性试验表明,该海洋源复合多肽固体饮料具有增强小鼠性功能及抗疲劳活性。
Some marine peptides, such as oyster peptide, sea cucumber peptide and eel peptide, were used as optional main ingredients, vitamin C(VC), sugar alcohol and instant coffee powder were used as auxiliary materials, to develop a marine-derived polypeptide solid beverage, and the enhanced sexual function and anti-fatigue effects in mice of the product were studied.Experiments were conducted to screen the effective ingredients and the optimal proportion. On this basis, the sensory evaluation was used as the inspection index, and the single factor experiments and orthogonal experiments were used to optimize the formula of the solid beverage. The results showed that the best formula of the solid beverage was determined as follows: the ratio of oyster peptide and sea cucumber peptide 10︰1 g/g, VC 0.20%, sugar alcohol 65%, and instant coffee powder 7.5%.The prepared marine-derived polypeptide solid beverage under these conditions was natural functional food with uniform color, no fishy taste, no sucrose, no pigment, no essence, and unique coffee flavor taste, and all indicators were in line with national standards. In addition, in vivo study results showed the marine-derived polypeptide solid beverage had effects of enhanced sexual function and anti-fatigue in mice.
