摘要
为探究固体石蜡和液体石蜡包埋核桃对其贮藏保鲜效果的影响。以大理漾濞带青皮鲜核桃和去青皮鲜核桃为原料,采用食用固体石蜡与液体石蜡进行涂膜包埋处理,定期对相关指标(感官、青皮硬度、水分、腐烂指数、过氧化氢酶、多酚氧化酶与过氧化物酶)进行测定,研究其对核桃保鲜的影响。结果表明,石蜡包埋(固体石蜡和液体石蜡)处理在储藏过程中对青皮核桃、脱青皮核桃均具有一定的保鲜作用,能够有效维持核桃感官品质、青皮硬度以及水分含量,能够有效抑制青皮核桃的褐变指数,同时抑制过氧化物酶、多酚氧化酶的活性并增强过氧化氢酶活性。此外,固体石蜡的保鲜效果优于液体石蜡,可使核桃鲜果货架期延长至90 d。
In order to explore the effect of solid paraffin and liquid paraffin embedding on the preservation of walnuts.Dali Yangbi fresh green-husk walnut and fresh walnut without husk are used as raw materials,and edible solid paraffin and liquid paraffin are used for coating and embedding treatment.The relevant indexes(sensory,green peel hardness,moisture,decay index,catalase,polyphenol oxidase and peroxidase)were measured regularly to study their effect on walnut preservation.The results showed that paraffin embedding(solid paraffin and liquid paraffin)had a certain fresh-keeping effect on greenhusk walnuts and peeled walnuts during storage.It can effectively maintain the sensory quality,peel hardness and water content of walnut,effectively inhibit the browning index of walnut,inhibit the activities of peroxidase and polyphenol oxidase and enhance the activity of catalase.In addition,the preservation effect of solid paraffin is better than that of liquid paraffin,which can extend the shelf life of fresh walnut fruit to 90 days.
