箱式密集烘烤过程中烟叶化学成分的变化动态及其对烤后烟质量的影响 被引量:16

摘要 【目的】探明箱式密集烘烤过程中烟叶化学成分的变化动态及对烤后烟质量的影响。【方法】研究烟夹和箱式两种装烟方式在烘烤过程中烟叶的含水量、色素含量、主要化学成分含量、香气成分含量变化及烤后烟质量。【结果】与烟夹密集烘烤相比,47℃前箱式密集烘烤烟叶失水速率较低,淀粉降解量及水溶性糖积累量较少,叶绿素降解速率较低,香气成分总量较低,47℃后则相反,且箱式密集烘烤烤后烟质量优于烟夹密集烘烤。【结论】箱式密集烘烤能提高烟叶上等烟比例与均价,改善烟叶外观质量及感官质量,提高烟叶香气质和烟叶可用性。 [Background]The objective of this study was to investigate the changes of chemical composition of tobacco leaves during the big box bulk curing and its effect on the quality of flue-cured tobacco.[Method]The changes of water content,pigment content,main chemical components content,aroma component content and the quality of flue-cured tobacco during the curing process under two kinds of treatments(the tobacco folder bulk curing and the big box bulk curing)were studied.[Result]Compared with the tobacco folder bulk curing,the big box bulk curing has a lower water loss rate,lower starch degradation and water-soluble sugar accumulation,lower chlorophyll degradation rate,and lower contents of total aroma components under 47℃.However,when the temperature was higher than 47℃,the the big box bulk curing exhibited a better performance than the tobacco folder bulk curing.[Conclusion]Big box bulk curing can increase the proportion and average price of top-quality tobacco leaves,improve the appearance quality of tobacco leaves,improve the aroma quality of tobacco leaves,improve the sensory quality of tobacco leaves,and improve the usability of tobacco leaves.
