明胶在两种低共熔溶剂中的溶解及再生结构比较 被引量:2

Comparison of Dissolution and Regeneration Structures of Gelatin with Two Deep Eutectic Solvents

摘要 以合成的三水乙酸钠(SAT)-尿素和氯化胆碱(ChCl)-二水合草酸(H_(2)C_(2)O_(4)·2H2O)两种低共熔溶剂(DES)来研究明胶溶解再生前后结构和性能的变化。结果表明,SAT-尿素DES和ChCl-H_(2)C_(2)O_(4)·2H2O DES的最佳配比分别为n(SAT)/n(尿素)=0.67、n(ChCl)/n(H_(2)C_(2)O_(4)·2H2O)=1.00。两种DES溶解明胶没有造成明胶化学分子结构的变化,而是在一定程度上破坏了明胶分子间的氢键作用,导致结晶度和热稳定性略微降低。而SAT-尿素DES与明胶形成氢键的能力更强,破坏明胶分子间氢键的程度更高,但对三螺旋构象破坏程度较低,因此更适合溶解明胶。 Two deep eutectic solvents(DES),sodium acetate trihydrate(SAT)-urea and choline chloride(ChCl)-oxalic acid dihydrate(H_(2)C_(2)O_(4)·2H2O),were synthesized assolventsto dissolve gelatin.The differenceinstructure and property of gelatin before and after regeneration was investigated.The result indicated that the optimum stoichiometric ratios of SAT-urea DES and ChCl-H_(2)C_(2)O_(4)·2H2O DES weren(SAT)/n(urea)=0.67 and n(ChCl)/n(H_(2)C_(2)O_(4)·2H2O)=1.00,respectively.The chemical molecular structure of gelatin was not changed by DES,but the hydrogen bondsamong gelatin molecules were destroyed to some extent,leading to slightly lower crystallinity and thermal stability.SAT-urea DES had a stronger ability to form hydrogen bonds with gelatin and a higher degree to break the intermolecular hydrogen bonds of gelatin,but the damage degree of the tri-helix conformation was relatively low,so it was more suitable for dissolving gelatin.
