摘要
本试验研究不同分子质量壳聚糖对黄羽肉鸡生长性能、脂质代谢、屠宰性能及肉品质的影响。采用单因子完全随机设计,将320只28日龄健康、体重相近的新广黄鸡(快速型黄羽肉鸡)母鸡随机分为5个组,每组8个重复,每个重复8只鸡。各组分别饲喂基础饲粮(对照组)及基础饲粮中添加不同分子质量(600、1117、2374、3600 u)壳聚糖的试验饲粮。试验期28 d。结果表明:1)各组间平均日增重、平均日采食量和料重比差异不显著(P>0.05)。2)各组间干物质和粗灰分代谢率差异不显著(P>0.05)。添加壳聚糖有升高粗蛋白质代谢率的趋势(P=0.086),3600 u壳聚糖组粗脂肪代谢率显著低于其他各组(P<0.05)。3)各组间血清游离脂肪酸和低密度脂蛋白胆固醇含量差异不显著(P>0.05)。添加壳聚糖有降低血清甘油三酯和总胆固醇含量的趋势(P=0.087、P=0.077),2374、3600 u壳聚糖组血清高密度脂蛋白胆固醇含量显著高于对照组(P<0.05)。4)各组间屠宰率、半净膛率、全净膛率、胸肌率和腿肌率差异不显著(P>0.05)。5)各组间胸肌的pH、肉色、剪切力及干物质、粗蛋白质和总氨基酸含量差异不显著(P>0.05)。2374和3600 u壳聚糖组胸肌的滴水损失显著低于对照组(P<0.05),胸肌粗脂肪和肌苷酸含量在2374 u壳聚糖组分别趋于最低和最高(P=0.091、P=0.076)。综上所述,饲粮中添加不同分子质量壳聚糖对黄羽肉鸡生长性能和屠宰性能无显著影响,但对脂质代谢和肉品质产生了明显的影响。饲粮中添加分子质量为3600 u的壳聚糖能显著降低粗脂肪代谢率;饲粮中添加分子质量分别为2374、3600 u的壳聚糖可降低血脂水平,并降低胸肌滴水损失,改善肉品质。
This study was conducted to investigate the effects of different molecular weights of chitosan on growth performance,lipid metabolism,slaughter performance and meat quality of yellow-feather broilers.A Single factor complete random design was adopted,and a total of 320 twenty-eight-day-old female XingGuang-Huang chickens(fast yellow-feather broilers)were randomly divided into 5 groups with 8 replicates per group and 8 birds per replicate.Broilers in each group were fed a basal diet(control group)and experimental diets which supplemented with different molecular weights(600,1117,2374 and 3600 u)chitosan,respectively.The experiment lasted for 28 days.The results showed as follows:1)there were no significant differences in the average daily gain,average daily feed intake and feed to gain ratio among all groups(P>0.05).2)There were no significant differences in the metabolic rates of dry matter and ash among all groups(P>0.05).Chitosan supplementation had a tendency to increase the crude protein metabolic rate(P=0.086).3)There were no significant differences in the contents of nonesterified fatty acid and low density lipoprotein cholesterol in serum among all groups(P>0.05).Chitosan supplementation had a tendency to reduce the contents of triglycerides and total cholesterol in serum(P=0.087 and P=0.077),and the serum high density lipoprotein cholesterol content of 3600 u chitosan group was significantly lower than that of other groups(P<0.05).4)There were no significant differences in the dressed rate,half eviscerated rate,all eviscerated rate,breast muscle rate and leg muscle rate among all groups(P>0.05).5)There were no significant differences in the pH,meat color,shear force and contents of dry matter,crude protein and total amino acid in breast muscle among all groups(P>0.05).The drip loss in breast muscle of 2374 and 3600 u chitosan groups was significantly lower than that of the control group(P<0.05),and the contents of ether extract and inosine monophosphate in breast muscle were tended to lowest and highest in 2374 u chitosan group(P=0.091 and P=0.076).In conclusion,dietary different molecular weights of chitosan have no significant effects on growth performance and slaughter performance of yellow-feather broilers,but have obvious effects on lipid metabolism and meat quality.Dietary supplemented the chitosan with molecular weight of 3600 u can significantly decrease the ether extract metabolic rate;dietary supplemented the chitosan with molecular weight of 2374 and 3600 u can decrease the serum fat level,decrease the drip loss in breast muscle,and improve the meat quality.
