摘要
[目的]本文旨在明确不同品种营养品质差异,为秋葵功能食品开发与品种选育提供理论依据。[方法]以6个秋葵品种为试验材料,对其果荚和种子形态特征及营养组分进行分析。[结果]在秋葵嫩荚中,可溶性糖含量最高(18.26%~54.65%),其次为可溶性蛋白(4.99%~7.52%)和粗纤维(2.41%~3.86%)。其中‘金秋葵’和‘羊角红秋葵’品种的可溶性糖显著高于其它品种,可溶性蛋白与粗纤维含量品种间差异不显著。在秋葵种子中,可溶性蛋白含量较高(9.27%~27.19%),其次为粗纤维(11.87%~25.84%)和可溶性糖(5.25%~8.58%)。此外,种子脂肪酸组成在品种间存在差异,但不饱和脂肪酸(UFA)比例均超过60%。‘绿美人’种子油脂中饱和脂肪酸(SFA)与单不饱和脂肪酸(MUFA)及多不饱和脂肪酸(PUFA)比例约为1∶1∶1。[结论]‘金秋葵’和‘羊角红秋葵’营养品质优异,适于鲜食。‘绿美人’籽油可用于制备健康型油脂产品。
[Objective]Present study on the nutrition analysis of different okra varieties was aimed to provide a theoretical basis for the efficient utilization of different varieties as functional foods and to develop new cultivars.[Methods]Six different okra varieties were selected as experimental materials,the morphological characteristics and nutritional composition of each variety were investigated.[Results]The results showed that the content of soluble sugar in tender pods was the highest(18.26%~54.65%),followed by the content of soluble protein(4.99%~7.52%)and crude fiber(2.41%~3.86%)in all tested varieties.The content of soluble sugar in'Jinqiukui'and'Yangjiaohong'were significantly higher than that of other varieties,while no significant differences of the contents of soluble protein and crude fiber were observed among the six varieties.The highest content of soluble protein(9.27%~27.19%)was detected in matured seeds,followed by the crude fiber(11.87%~25.84%)and soluble sugar(5.25%~8.58%).Although the content of fatty acid composition varied in different varieties,the proportion of unsaturated fatty acids(UFA)in all okra varieties was greater than 60%.The proportion of saturated fatty acids(SFA),monounsaturated fatty acids(MUFA),and polyunsaturated fatty acids(PUFA)was closest to 1∶1∶1 in'Lvmeiren'.[Conclusion]With excellent nutritional quality,'Jinqiukui'and'Yangjiaohong'were suitable for fresh consuming and the seed oil of'Lvmeiren'was of value for healthy fat products.
