摘要
传统手工业酿造白酒存在产量低、劳动强度大等问题,因此转变其生产方式,提高白酒生产质量与效率是当代白酒生产行业研究的重点课题之一。为此,从生产工艺角度研究传统手工业酿造白酒的新型工业化发展道路,即在分析传统手工业酿造工艺特点与存在的问题的基础上,对其进行重构创新,以实现白酒的机械化、自动化生产,以期解决传统手工业酿造中存在的问题,为白酒酿造行业的发展提供一些借鉴。
Traditional manual production of Baijiu has the problems such as low yield and high labor intensity.Therefore,it is always one of the key issues in Baijiu industry to upgrade its production patterns for improving liquor quality and the manufacturing efficiency.In this paper,the mechanization development of traditional Baijiu-making technology was studied from the perspective of production techniques.Namely,based on the analysis of the characteristics and the existing problems in traditional manual production,the technical innovations were introduced to achieve mechanized liquor-making gradually and settle the existing problems as well.
