摘要
花生是我国主要的经济作物之一,也是重要的油料作物,目前我国对花生的利用主要集中于油脂的榨取,对花生多肽的研究和利用却相对较少。花生榨油后的粕可以用于制备花生多肽,花生多肽中氨基酸的种类齐全,具有多种良好的功能活性和极高的利用价值。本文从花生多肽的制备、分离、功能活性以及其开发利用四个方面展开,综合阐述了花生多肽的研究进展及其应用现状,分析存在的问题,展望了今后的发展方向,为花生多肽的进一步研究和利用提供总结及合理化建议。
Peanut is one of the main economic crops and an important oil crop in China.At present,the utilization of peanuts in China is mainly concentrated on the extraction of oil,but the research and utilization of peanut peptide were relatively few.Peanut meal can be used to prepare peanut peptide and peanut peptide has a complete range of amino acids,has a variety of good functional activities and high utilization value.The study of this paper develops according to the four aspects:preparation,separation,functional activity,and development and utilization of peanut peptide,reviewing the research progress and development and utilization of peanut peptide,which analyzd the existing problems,and prospected thedevelopment direction in the future,and summarized and rationalized suggestions for the further research and utilization of peanut peptide.
