摘要
文章阐述了不同来源的多肽与金属元素钙、铁、锌和非金属元素硒螯合的制备方法,以及其抗氧化性、抗菌性、增强免疫等方面的研究进展,并分析了现有研究的不足。
In this paper,the preparation methods of chelating polypeptides from different sources with the metallic elements,such as calcium,iron,zinc and selenium,as well as the research progress on their antioxidant,antibacterial and immune-enhancing properties were reviewed,and the deficiencies of the existing researches were also analyzed.
