摘要
亚硝酸盐作为一种食品添加剂,经常添加到食品中,人们在日常生活中都不可避免地摄入亚硝酸盐.亚硝酸盐有强烈的毒性以及致癌作用,过度食用会对身体造成损害.着重介绍了亚硝酸盐的危害、来源及在其国内外的测试方法,主要包括光度法、色谱法、电化学法、滴定法和快速检测法等,并对今后的研究作了展望.随着人们对健康的重视,更准确、更便捷、更快速的检测手段将会出现.
As a food additive, nitrite is often added to foods, and people inevitably consume nitrite in their daily lives. Nitrite has strong toxicity and carcinogenic effects, and excessive consumption can cause damage to the body. The hazards, sources and test methods of nitrite were mainly introduced, including photometric method, chromatography, electrochemical method, titration method and rapid detection method, and future research was prospected. As people pay more attention to health, more accurate, more convenient and faster inspection methods will appear.
