摘要
目的 研究能有效控制影响矿泉水微生物污染的管理方法。方法 采用危害分析关键控制点(HACCP)系统。结果 找出了影响矿泉水卫生质量的关键控制点,提出了解决的方法,提高了产品的卫生质量。矿泉水的水源水、灭菌后水和灌装后水质量前后合格率相比x^2值分别为8.95、6.67、5.43,P<0.01和0.05。结论 HACCP应用于矿泉水生产中,将危害控制在发生之前,保证了产品的质量。
[Objective[ To study the effective method in controlling microbial pollution in natural mineral water.[Methods[ Hazard Analysis and Critical Control Point (HACCP) System was applied.[Results] Critical points affecting the hygienic quality were found out.Relevant solutions for improvement were figured out.[Conclusion] The application of HACCP in the production process of mineral water guarantees the hygienic quality before happening.
