摘要
为初步了解藏区紫青稞中酚类物质的含量和理化特性,对7个不同紫青稞品种(系)中多酚类物质的含量及总黄酮抗氧化性进行检测,结果发现:供试紫青稞总黄酮含量为0.21%~0.32%,6个紫青稞品种中,只有旱地紫青稞与对照隆子黑青稞具极显著差异(P<0.01);槲皮素含量为55.1~97.1 mg/g,其中,易贡隆和北青2号均显著低于对照(P<0.05);杨梅素含量为3.7~10.4 mg/g,其中,江当蓝与QB35含量相当,并与其他品种含量均有极显著差异;儿茶素含量为6.9~20.7 mg/g,且只有江当蓝比对照含量低;抗氧化活性为11.0%~19.2%,且相同青稞品种(系)所含的不同酚类物质含量差异明显。总黄酮含量与抗氧化活性不呈现正相关性,除北青2号与隆子黑青稞无显著差异外,其余品种间抗氧化活性存在显著或极显著性差异。
The current research aimed to assess the contents and properties of phenolic compounds in different colored hulless barley varieties grown at different altitudes in Tibet. Seven colored hulless barley varieties were tested for the contents of phenolic compounds and the antioxidant activities of total flavones, which consisted of Handi purple hulless barley, QB35, Yigonglong, Xingduqiao,Jiangdang blue, Beiqing number 2, and the control variety Longzi black barley. The results showed that the contents of total flavones in the tested varieties were in the range of 0.21%~0.32%; among the 6 tested native hulless barley varieties, only Handi purple hulless barley had a very significant difference(P 〈0.01) from the control in this parameter. The range of quercetin contents in the tested varieties was 55.1~97.1 mg/g; Yigonglong and Beiqing number 2 had a lower quercetin content than the control, while the two tested varieties also significantly differed(P〈 0.05) in this parameter. The range of myricetin contents in the tested varieties was 3.7 ~10.4 mg/g. The content range of catechinic acid in these varieties was 6.9~20.7 mg/g, and only Jiangdang blue had a lower catechinic acid content than the control. The antioxidant activities of these varieties ranged from 11.0% to 19.2%. At the same time, we noticed that different colored hulless barley varieties had significant differences in the contents of phenolic compounds. Furthermore, the antioxidant activity was not positively correlated with the content of total flavones. While Beiqing number 2 and Longzi black hulless barley had no significant difference in antioxidant activity, the other tested colored hulless barley varieties had significant(P〈 0.05) or very significant(P〈 0.01) differences in this parameter.
