摘要
以铁观音茶梗为原料,采用挤压膨化技术和酶解技术对其进行分步改性,以SDF粗品含量为指标,确定了铁观音茶梗一次挤压膨化工艺条件为:喂料螺杆转动频率为20 Hz,挤压膨化机机筒一区温度为120℃、机筒二区温度为100℃、螺杆转动频率40 Hz、进料含水量50%,纤维素酶二次水解改性工艺条件为:加酶量3.5%、水解时间4h、料液比为1∶15、水解温度50℃、p H值=5,采用此改性工艺对铁观音茶梗粉末进行处理,测得SDF粗品含量为4.03%,持水力为6.92 g·g-1,膨胀力为3.07 m L·g-1,结合脂肪能力为3.89 g·g-1,相较于改性前均有大幅度提升。
Taking Tie Guanyin tea stalk as raw material, carrying out the correponding modification step by step with extrusion and enzymatic hydrolysis technology, and using the SDF content in crude product as index, the optimum process conditions of one - time extrusion of Tie Guanyin tea stalk are achieved as follows : rota- tion frequency of feed screw should be 20 Hz, temperature of zone one of extrusion machine barrel should be 120℃, temperature of zone two should be 100℃, rotation frequency should be 40 Hz and feed water content 50%. And the conditions of secondary hydrolysis modification of cellulase are achieved as follows : cellulase a- mount should be 3.5%, hydrolysis time should be 4h, solvent ratio should be 1 : 15, hydrolysis temperature 50 ℃ and pH 5. The Tie Guanyin tea stalk powder has been processed with this modification technology, and the result showed that the crude product SDF content reached 4.03%, WHC was 6.92 g · g-1, expansive force was 3.07 mL · g-1, and the fat - binding capacity 3.89 g · g-1 , which were all obviously higher than before.
