鱿鱼肝脏油脂精炼及其脂肪酸组成分析 被引量:4

摘要 以淡碱水解法所提鱿鱼肝脏粗油脂为原料,采用脱胶、脱酸、脱色、脱臭工艺对其进行精炼,并采用GC-MS对油脂脂肪酸组成进行分析。结果表明:鱿鱼肝脏粗油脂经精炼处理,油脂得率为55.7%,且油脂品质明显提升,精炼油脂呈浅黄色、澄清、淡鱼腥味,其酸值、碘值和过氧化值均达到水产行业一级粗鱼油标准。精炼过程对鱿鱼肝脏油脂脂肪酸组成影响较小,鱿鱼肝脏油脂富含EPA和DHA,两者总量高达30%以上,可作为EPA和DHA的重要膳食来源。 The crude squid liver oil extracted by weak alkali hydrolysis was refined by the processes of degumming,deacidification,bleaching and deodorization,and the fatty acid composition of squid liver oil was analyzed by GC-MS. The results indicated that the yield of squid liver oil was 55. 7% and the oil quality improved significantly after refining. The refined oil was light yellow and transparent with light fishy,and its acid value,iodine value and peroxide value met the first-grade crude fish oil requirement of fishery industry standard. The fatty acid composition of squid liver oil was less affected by the refining process.Squid liver oil was rich in EPA and DHA with total content more than 30%,which could be used as an important dietary sources of EPA and DHA.
