鲤鱼、鱿鱼和鳕鱼皮中脂肪酸的气相色谱-质谱(GC/MS)分析与比较 被引量:16

摘要 36℃真空干燥鱿鱼皮、鳕鱼皮、鲤鱼皮;索氏抽提法提取脂肪,抽提剂为沸程30~60℃石油醚;KOH-甲醇皂化甘油三酯;三氟化硼乙醚-甲醇甲酯化脂肪酸;GC/MS分析脂肪酸组成.在鱿鱼、鳕鱼、鲤鱼皮中分别鉴定出了18、20、29种脂肪酸.鱿鱼皮和鳕鱼皮鱼油中EPA和DHA含量都很高,鱿鱼皮鱼油中DHA占35.93%、EPA占14.93%;鳕鱼皮鱼油中EPA占15.04%、DHA占13.39%.鳕鱼皮鱼油中油酸的含量也很高,占22.62%.鲤鱼皮鱼油中主要脂肪酸是油酸(30.34%)、亚油酸(22.58%)和软脂酸(16.33%).鲤鱼皮鱼油中DHA含量很低(1.00%),而且没有发现EPA;这与鱿鱼皮和鳕鱼皮中的鱼油有很大不同.
