摘要
肠膜明串珠菌BD1710可在番茄汁蔗糖培养基中代谢合成右旋糖苷,其发酵液可作为主要原料来勾兑制备富含右旋糖苷的发酵饮料,通过正交试验确定了该多糖饮料的配方为:发酵液用量30%(体积分数)、蔗糖添加量6%、柠檬酸添加量0.2%,优选配方制备的发酵饮料中多糖含量可达1.0%以上。
Leuconostoc mesenteroides BD1710 is capable of synthesis tising dextran by fermenting tomato juice-sucrose medium, and the culture could be used as primary raw material to produce such beverage rich in dextran. According to the orthogonal test results, the optimal processing parameters were as follow: fermentation30 %(volume fraction)、sucrose 6 % and citric acid 0.2 %. Dextran content in the best formula beverage was above 1.0 %.
