摘要
动车组的配餐随着高速动车组列车的发展而逐渐向产业化、规模化、机械化及标准化发展,为配餐基地的建设提供了条件。但是,动车配餐的发展又极大地受到价格及食品安全的影响。可通过引入食品企业、建立动车配餐基地、使用HACCP体系、合理规划定价方式、增强餐点吸引力以及增加订购配餐途径等方法来解决,满足铁道部和广大乘客对动车组配餐的要求。
The catering service on high-speed trains is developing towards industrialization,standardization and mechanization,which makes it necessry to establish a supply base. Although its further growth might be affected by prices and food safety issues,strategies such as introducing catering businesses,establishing supply bases,employing HACCP system,planning pricing modes,improving food attraction,and increasing ordering channels,can be adopted to tackle the problems and to meet the requirements of the railway authorities and passengers.
