广州市中小型餐饮单位熟肉制品与水产品副溶血性弧菌污染状况比较分析 被引量:1

摘要 目的了解广州市中小型餐饮单位副溶血性弧菌污染情况,比较中小餐饮单位熟肉制品和水产品中副溶血性弧菌的检出情况,初步评价中小型餐饮单位受副溶血性弧菌交叉污染的可能性。方法在广州市中心城区、城乡结合部和乡镇共60家中小型餐饮单位,每家最少抽取3份熟肉制品、3份鲜活水产品进行副溶血性弧菌的检测。结果鲜活水产品副溶血性弧菌的检出率为38.33%(69/180),明显高于熟肉制品0.00%(0/180)。结论广州市中小型餐饮单位的鲜活水产品受副溶血性弧菌污染严重,但未发现熟肉制品的交叉污染现象。 Objective To investigate the contamination status of vibrio parahaemolyticu in medium and small res- taurant of cooked meat products in Guangzhou city, compare the detective rate between cooked meat products and aquatic products in medium and small restaurant to evaluate possibility of the cross - contamination prelim-inarily. Methods In urban and rural units of a total of 60 small and medium sized restaurants, at least 3 copies of cooked meat and fresh aquatic were selected to detect vibrlo parahaemolyticus in each restaurant. Results The detection rate of vibrio parahaemolyticu in fresh aquatic products was 38.33% (69/180), was significant higher than cooked meat products 0. 00% (0/180) . Conclusions The vibrio parahaemolyticu contamination of aquatic products was serious in Guangzhou city but no obvious cross - contamination was found in cooked meat products.
