摘要
磷脂脂肪酸(PLFA)是活体微生物细胞膜的重要组成部分,且其在细胞膜中的成分和含量是相对稳定的,提取之后易于进行定性和定量研究。磷脂脂肪酸技术是基于PLFA作为生物标记物而发展起来,该文介绍了PLFA技术在食品微生物检验中的应用,主要包括对食品微生物的鉴定、分型、溯源和群落结构分析方面的研究。同时指出了该技术存在的不足及其发展前景。
Phospholipid fatty acid (PLFA) is an important component of microorganism cell membrane. The components and content are relatively stable in cell membrane and it is convenient to conduct qualitative and quantitative study after extraction. PLFA technology is developed based on PLFA as a biomarker. In this paper, the application of PLFA technology in the microbiological examination of food was introduced, which was main- ly about microbial identification, classification, tracing and community structural analysis. Meanwhile, the disadvantages and development prospect of this technology were pointed out.
