摘要
文章就明胶的凝胶化和凝冻强度的影响因素等方面进行了综述,为明胶凝胶化作用的研究和开发利用提供了文献依据。
This article summarizes gelation of gelatin and influencing factors of gel strength,which provides a literature basis for the fur-ther researches and the development of gelation of gelatin.
