摘要
[目的]选育亚硝酸盐降解能力增强的肠膜明串珠菌并探讨其降解机理。[方法]通过60Coγ射线和出发菌的代谢特性筛选肠膜明串珠菌突变株,分析突变株的生长特性及亚硝酸盐还原酶活力变化,探讨其降解机理。[结果]剂量为800 Gy的60Coγ射线处理后获得1株遗传稳定好的肠膜明串珠菌突变株LM-S-3,它的亚硝酸盐降解率是出发菌的2.93倍;它的强降解亚硝酸盐能力可能与其耐酸性和高活性亚硝酸盐还原酶有关。[结论]60Coγ射线诱变选育的肠膜明串珠菌突变株具有较强的亚硝酸盐降解能力,可作为发酵剂辅助降解泡菜中的亚硝酸盐。
[Objective] To screen a mutant strain of Leuconostoc mesenteroides with enhanced nitrite degradation capability and to obtain its mechanism of nitrite-degradation.[Method] Different doses of ^60Co γray were used to treat the parent strain of Leuconostoc mesenteroides.The growth characteristics and nitrite reductase activity were determined.[Result] A mutant LM-S-3 whose nitrite-degradation rate was 2.93 times of that of the parent strain was obtained by treatment of 800 Gy ^60Co γ ray.The nitrite-degradation mechanism of mutant strain may be related to its high acid-resistant and nitrite reductase activity.[Conclusion] The mutant LM-S-3 with enhanced nitrite-degradation capability which was obtained by treatment of ^60Co γ ray can be developed as starter to degrade the nitrite content in Paocai.
