摘要
利用酵母菌对不同碳源消耗能力和消耗速度不同的原理 ,对酵母菌进行筛选试验 ,选出一株只利用葡萄糖、麦芽糖而不利用异麦芽糖、潘糖、异麦芽三糖等分枝低聚糖的优良酵母菌10号 ,并对该菌的特性进行了研究。利用10号菌种发酵低纯度的低聚异麦芽糖溶液 ,可使其纯度达到95%以上。
On the principle of having different capacity and speed that Microbiology consume different carbohydrate,a good strain of saccharomycete No.10 has been screened from some saccharomycetes throuth experiment and its characteristic has been studied.Saccharomycete No.10 consumes glucose and maltose but not consume isomaltose,panose,isomaltotritose and other oligosaccharides.The purity of low-purity isomaltooligosaccharide fermented by using saccharomycete No.10 should be over 95%.
