摘要
植物甾醇主要来源于植物油脂,具有降低血清中胆固醇含量等多种生理功能。但植物甾醇属脂溶性物质,不能与水溶性物质混溶,使其应用受到限制,对植物甾醇进行乳化可改善其水溶性,从而拓宽其应用范围。综述了植物甾醇的乳化处理及其应用研究进展。
Phytosterol mainly comes from vegetable oil, and it has many physiological functions, for example it can decrease the serum cholesterol levels. Phytosterol is fat - soluble materials and is difficult to be mixed with the watersoluble material ,whieh limits its application. Emulsification ean improve the water - solubility of phytosterol and expand its application scope. The research progress of phytosterol emulsification was reviewed.
