摘要
本文以胭脂萝卜为原料进行食用红色素的提取研究。通过用水作浸提剂,果胶酶除去胭脂萝卜中的果胶,乙酸除去该色素中的糖份,水蒸馏法除去粗产品中的萝卜异味,最后得到了较为纯净的胭脂红色素。
A way of separating some comestible red pigment from the red turnip is studied by this paper. The pectin in the red pigment, which is obtained by using water as the solvent, is removed by acetic acid, and the turnip peculiar smell is removed by steam distillation directly finally, a fairly pure red pigment is obtained.
