摘要
研究了MAP包装对茭白的嫩度、表皮色泽、叶绿素含量及细胞质膜相对透性的影响。结果表明:高密度聚乙烯包装可保持茭白的嫩度、抑制果皮中叶绿素的合成及细胞质膜透性的增加。
The effect of modified atmosphere storage on tenderness, surface color of water bamboo was studied.The result showed that the MAP could maintain tenderness,inhibit the synthesis of chlorophyll in surface,and maintain better cell membrane integrity.
