乌龙岭龙眼防腐抗褐变与MAP保鲜技术研究 被引量:1

A Study on Antisepsis and Browning Resistance and MAP Storage Technique for Wulongling Longan

摘要 以乌龙岭龙眼为原料,筛选龙眼防腐褐变保鲜剂,研究确定其MAP保鲜技术.实验表明:以半胱氨酸、硫脲、尿素、2,4-D及磷酸二氢钾组成的保鲜剂处理对抑制龙眼果皮褐变均有效果,其中以加有半胱氨酸或硫脲的B、D保鲜剂处理的综合保鲜效果最好;乌龙岭龙眼MAP保鲜的最佳参数为,贮藏温度(5±1)℃,PE膜厚度0.03 mm,单位透气面积的装果量为5~7 kg.贮藏40 d好果率达96.5%,褐变指数为68.4%,果肉可溶性固形物为20.2%,总糖15.6%,还原糖2.9%,百克果肉含维生素C 74.6 mg. Antisepsis and browning resistance and MAP storage technique for Wulongling longan were studied, the results showed that antistaling agent composed of halfcystine, thiorea, urea,2,4 -D and potassium phosphate monobasic could inhibit browning of longan, the B and D treatments composed of halfcystine or thiorea had the best effect in all the treatments ; the optimum parameters of MAP storage technique were packaged fruit weight 5 - 7 kg/m^2 with 0.03 mm polyethylene film at (5 ± 1 )℃. After 40 days storage , the healthy fruit, browning index , soluble solid content , total sugar, reducing sugar and Vc were 96.5% , 68.4% , 20.2% , 15.6% , 2.9% and 74.6 mg/100 g respectively.
