摘要
以酸枣皮为原料,用30%乙醇溶液浸提得酸枣皮天然色素,并对其理化性质进行了研究.结果显示,该色素在弱酸性及中性条件下,具有良好的稳定性,在食品工业中有一定的开发利用价值.
The pigment in the wild jujub skin is extracted by 30% ethanol solutio n.And the physic-chemical properties of the pigment are also studied.The results show that the pigment has fine stability in weak acidic or neutral solution.Therefore it had some exploiting value in food industry.
