含不同脂肪链脂溶性茶多酚的合成及其抗氧化活性研究 被引量:11

Synthesis of Liposoluble Tea Polyphenols with Varying Aliphatic Groups and Their Antioxidation Activity

摘要 通过脂肪酰氯与茶多酚 (TP)的反应 ,制备出了一系列含不同直链脂肪基团的脂溶性茶多酚 (LTP)。脂肪链的碳原子数≥ 10时 ,LTP在色拉油中的溶解度是茶多酚的 2 0 0 0倍以上。红外吸收光谱表明 ,LTP分子中仍存在酚羟基 ,但酚羟基的相对含量由TP的 10 4 %减少到6 8 4 %~ 80 7%。LTP在色拉油中仍具有抗氧化活性 ,且其抗氧化活性的大小与脂肪链的长度有关 ,脂肪链的碳原子数为 10和 12时 ,产物 (LTP - 10和LTP - 12 )表现出较高的抗氧化活性。以茶多酚含量计算 ,m(LTP - 10 )∶m(油 ) =0 0 6∶10 0时 ,油样在 6 0℃氧化 15d和室温氧化12 0d后 ,其过氧化值抑制率分别为 71 5 %和 4 8 7% ,均高于相同条件下的TP的抑制率(6 2 4 %和 32 0 % )。 Liposoluble tea polyphenols (LTP) with varying aliphatic groups were synthesized by reaction of aliphatic acyl chloride and tea polyphenol (TP).Solubility of the products in salad oil increased more than 2000 times when aliphatic acyl chlorides having 10 or more carbon atoms were used.IR absorption spectra indicated that the relative percentage contents of phenolic hydroxyl in LTPs were reduced to 68 4%-80 7% compared with that of TP (104%). But LTPs still remained antioxidation activity in salad oil,effect of which depended on the length of aliphatic chain. It was found that the products obtained from decanoyl chloride and lauroyl chloride (recorded as LTP-10 and LTP-12, respectively) exhibited perfect antioxidant effect in salad oil . For example, at the concentration of 600mg/kg on the basis of TP content,peroxide-inhibiting rate of LTP-10 on salad oil incubated at 60 ℃ for 15 days and at room temperature for 120 days were 71 5% and 48 7% respectively,higher than that of TP( 62 4% and 32 0% respectively).
