摘要
1996年至1997年期间,我们对合肥市场销售的面制食品中铝含量情况进行了调查(其中蒸制面食品样品中铝含量符合卫生标准占95%)。而油炸面制食品中铝平均含量最高为302mg/kg,其中油条超标率达80%,最高值为1790mg/kg,烘烤面制食品铝含量超标率为55%,造成油炸和烘烤面制食品铝含量超标与制作过程中使用含铝添加剂有关。
This paper reported the result of aluminun content of wheat flour foods in Hefei from 1996 to 1997.The results indicated that 95% steamed wheat flour food ,58% deep-fried wheat flour food and 45% toasted wheat flour food meeted hygiene criterion respectivily. Aluninum content of deep-fried twisted dough sticks was highest(1790mg/kg).Raised aluninum content of deep-fried and toasted wheat flour foods is related to food additives application.
