摘要
食物中的硝酸盐在人体内酶和微生物的作用下会变成亚硝酸盐,在一定条件下在人体内与食物摄取的蛋白发生化学反应变成亚硝酸胺。动物实验已经证实亚硝酸胺是一种强烈的致癌物质,蔬菜中硝酸盐的含量测定现在都是采用国家标准方法——镉柱法,但镉柱法操作程序繁琐,检测时间过长,不能满足蔬菜快速流通的需要。我们采用硝酸根离子选择性电极法不仅简化了操作程序而且也缩短了检测时间。是蔬菜质量监督检验的理想方法。
Nitrate would turm into nitrite by enzyme and microbial action Within human body.Under certain conditions nitrite would react with protein and turn into nitrosamine,which was provedtobe the most suong carcinogen by the animal tests .while the state standard assay method of findins the nitrate content in vegetables has been only the cadmium calumniation method,but its operation would takea long time,and its test process was complex,so it could not meet the vegetable fast circulation requirement.Hence the Nitrate Radical Ion Selectivity Electrode Method would not only simplify the operation process but also shorten the fest time,so it could be an ideal method.
