超细粉碎技术是一门新兴的科学技术,将其引入面粉加工中,通过改变面粉的粒度,使面粉的组成成分和工艺特性发生变化,从而获得多种不同蛋白质含量的专用面粉,满足各种面食制品生产的需要。
Ultra- fine grinding is a new science and technology.When it was applied to flour processing,it altered the component and technological characteristic of flour by changing the size of flour granule.Thus an amount of special flours with different protein content were obtained.These special flours suited to production various flour food.
