袋料栽培黑木耳与段木栽培黑木耳的品质分析 被引量:12

摘要 测试了代料栽培黑木耳和段木栽培黑木耳的氨基酸、粗蛋白、粗脂肪、粗纤维、碳水化合物、核酸、微量元素和维生素含量。结果表明 ,代料栽培黑木耳中的氨基酸总量为 10 .0 2 % ,其中必需氨基酸占氨基酸总量的 4 2 .4 7% ;而段木栽培黑木耳的氨基酸总量为 9.51% ,必需氨基酸占氨基酸总量的 38.31%。粗纤维、粗蛋白、粗脂肪含量在代料栽培黑木耳中分别为 4 .96%、12 .38%和 0 .90 3% ,在段木栽培黑木耳中分别为 4 .2 3%、12 .4 9%和 1.0 3%。碳水化合物含量在代料栽培黑木耳中为 66.92 % ,而在段木栽培黑木耳中则为 69.19%。VB1、VB2 、P、Zn和核酸的含量二者比较接近 ,而代料栽培黑木耳中的Fe。 The nutritional contents of amino acid, crude protein, crude fat, crude fibre, carbohydrate, nucleic acid, trace elements and vitamins of Auricularia auricula cultivated with sawdust medium and log were tested and analyzed. The results showed that the total amino acid content in sawdust medium-cultivated Auricularia auricula SMCAA was 10.02%, of which the essential amino acid content was 42.47%; correspondingly, it was 9.51% and 38.31% in log-cultivated Auricularia auricula LCAA resp.. The contents of crude fibre, crude protein,crude fat and carbohydrate in SMCAA were 4.96%,12.38%,0.903% and 66.92% resp., while those were 4.23%,12.49%,1.03% and 69.19% in LCAA resp.. And the contents of vitamin (VB 1 and VB 2), trace elements(P and Zn) and nucleic acid in SMCAA were similar to that in LCAA,but the contents of Fe and Ca in SMCAA were significantly higher than that in LCAA.
