摘要 食品安全问题已成为当今世界性的公共卫生热点,而食源性致病菌是引起食源性疾病的首要原因。沙门氏菌、大肠杆菌O157:H7、金黄色葡萄球菌、单增李斯特菌和副溶血性弧菌是引起食物中毒的主要致病菌,严重威胁着人类的健康。本文主要论述了近几年来国内外这5种主要食源性致病菌的污染状况,并进一步探讨了各种污染的预防控制措施,确保人类健康和公共卫生事业的稳步发展。 Food safety had become an important public healthy hotspot issue all over the word and foodborne pathogens were the primary cause of foodborne diseases. Salmonella, Escherichia coli O157:H7, Staphylococcus aureus, Listeria monoc-ytogenes and Vibrio parahaemolyticus, as major foodborne pathogens for food poisoning, became a great threat to human and public health all the time. In this paper , the current pollution situation of the five foodborne pathogens above were summarized , and the preventive and control measures of foodborne pathogens pollution were further discussed.
