摘要
以干燥的菠萝皮为原料,研究了酶法提取菠萝皮中可溶性膳食纤维(SDF)的关键技术,并采用正交试验设计优化SDF的提取工艺,测定了膳食纤维的持水力和溶胀性。结果表明,酶法提取菠萝皮可溶性膳食纤维的适宜工艺条件为:纤维素酶质量分数0.7%、料液比1︰30(g/mL)、酶解温度60℃、浸提4次、pH 5.6、酶解时间75min;在此工艺条件下,可溶性膳食纤维的提取率可达23.89%。膳食纤维的持水力为11.86 g/g,溶胀性为15.5 mL/g。菠萝皮可以作为一种优良的膳食纤维来源。
In order to promote the comprehensive utilization of pineapples, using the pineapple peel as material, the extraction of soluble dietary fiber (SDF) was studied with cellulose. On the base of the single factor experiment, the technological parameters of soluble dietary fiber from pineapple peel were optimized using orthogonal experimental. The results showed that optimized extraction technology was as follows: concenlration of cellulose of 0.7%, liquid-solid ratio of 1 : 30 (g/mL), enzymatic hydrolysis temperature of 60 ~C, extraction number of 4, pH 5.6, enzymatic hydrolysis time of 75 min. Under this condition, the extracting rate of SDF from pineapple peel was up to 23.89%. The water holding capacity was 11.86 g/g, and swelling capacity was 15.5 mL/ g. The dietary fiber from pineapple peel has excellent physicochemical properties.
