膳食纤维的改性,以及对其生理功能和理化性质影响的深入研究,已成为人们关注的热点。综述了化学改性法、物理改性法、微生物发酵与酶法在膳食纤维改性研究中的进展,以及改性膳食纤维的生理功能和应用前景。
There are more attentions about the modification of dietary fiber and its effects of physiologic function and physico-chemical properties. The text.reviewed the dietary fiber modification with chemical treatment, physical treatment, fermentation and enzymatic hydrolysis, it's physiologic function and application.
