摘要
水果中含有多种抗氧化活性物质,对人体多种疾病的发生具有积极预防作用。现今,由于市售果汁购买、饮用方便快捷,其种类和数量正在逐渐增多。为比较市售果汁的抗氧化活性,分别用ABTS法、DPPH法和FRAP法测定了14种市售果汁的抗氧化能力。结果表明:14种果汁均有一定的抗氧化活性,但差异显著。通过考察果汁样品的总酚含量,发现其与3种方法所得的抗氧化活性之间的线性关系并不显著,表明果汁样品中除酚类物质外,可能还存在其他抗氧化活性物质。
Vegetables are known to contain a wide variety of antioxidants which may provide protection against the development of kinds of diseases. The objective of the study was to analyze the total antioxidants of commercially available fruit juices. The antioxidant ability of 14 merchant juices was evaluated by methods ofABTS, DPPH and FRAP. The results showed that: all 14 kinds of juices had antioxidant capacity in different antioxidant evaluation systems, but significant differences existed in these different kinds of juices. Meanwhile, the total phenolics of juices were determined, and a non-linear correlation between total phenol content and antioxidant capacity of 14 kinds of juice was achieved. It is indicated that there might also be other antioxidants except phenolics in these different kinds of juices.
