小麦胚芽多肽制备的研究 被引量:1

摘要 小麦胚芽脱脂后,通过正交试验研究了小麦胚芽蛋白质的提取工艺,试验结果表明,提取小麦胚芽蛋白质的最佳工艺条件是:pH值9.5、提取时间80min、温度50℃和料液比为1∶6,在最佳条件下小麦胚芽蛋白的提取率为63.16%。并对得到的小麦胚芽蛋白进行了测定与分析。以脱脂小麦胚芽为原料,采用碱性蛋白酶(Alkaline Protease,Alcalase)水解制备了小麦胚芽多肽。并对脱脂小麦胚芽肽进行了分析检测。
