摘要
对近5年来《中国期刊网》收录的关于药膳的论文资料进行聚类分析,共发现药膳配方451条,其中涉及的原料大多数符合卫生部关于保健食品原料管理的规范要求。原料中植物性物品所占的比例最大,又以温、寒两性和甘味物品使用频率最高;从功效角度看,以活血、通经、活络药膳较为常见;药膳的流行具有阶段性和地域性特点。药膳原料的使用总体上符合中医理论和烹饪营养学原则,但普遍存在缺乏科学管理和规范等问题。
Through cluster analysis of the papers collected in China Journal Net in past five years, a total of 451 medicated formulas were found, most of which involved raw materials complying with the regulatory re- quirements of the Ministry of Health for health food raw materials management. Herbs occupied the largest pro-portion of the raw materials in medicated diets, among which warm, cold and gender and sweet herbs were most frequently used. The most common efficacy in medicated diets were invigorating the circulation of blood and dredging collaterals. The popularity of medicated diets was regional and periodic. The use of medicated raw materials was generally consistent with the theory of traditional Chinese medicine and principles of cooking nutrition, but there were also such problems as lack of scientific management and standardization.
