摘要
综述了紫外-可见分光光度法在食品检测及食品安全分析中的应用。详细评述了紫外可见分光光度法在测定酸奶中维生素A、食品中磷脂酰胆碱等食品营养成分中的应用,以及在食品安全分析中(如:食品中重金属、农残、甜蜜素、硝酸盐、防腐剂、香兰素)的研究进展。最后展望了紫外可见分光光度法在食品分析中的发展前景。
The application of UV-vis spectrophotometry in food determination and food safety analysis in recent years was reviewed in this paper. Determination of the food nutrients, for example vitamin A in yogurt, phosphatidyl choline by UV-visible spectrophotometry were reviewed in detail. Then the food safety analysis (e.g. heavy metals, pesticide residues, sodium cyclamate, nitrates, preservatives, vanillin in foods) were described. Finally the development of UV-vis spectrophotometry in food analysis was presented.
