O_3(臭氧)处理黄冠梨低温贮藏技术研究

摘要 为了研究黄冠梨O3处理后的长期低温贮藏技术,2011年8月3~31日分5批(每7 d取样1次)采摘果实,在室温条件下预冷24 h后进行4个O3浓度(0、30、60和90 mg/m3,其中以不进行O3处理为CK)处理,然后放入温度为-1~1℃、相对湿度为85%~95%的冷库中贮藏,研究了不同O3浓度对不同批次黄冠梨低温贮藏后外观品质和内在品质(硬度、总糖含量、可滴定酸含量)的影响。结果表明:8月24日采摘批次的果实在贮藏期结束时总糖和可滴定酸含量较高,硬度适中;果实经30 mg/m3的O3处理后再进行湿冷贮藏保鲜效果较好,并且降低果实鸡爪病的发生。初步确定黄冠梨的保鲜技术措施为:果实在8月24日左右采摘,先在室温条件下预冷24 h,然后用发泡软质网套包裹,分层装入衬有乙烯袋的果箱,采用30 mg/m3O3处理后放入温度为-1~1℃、相对湿度为85%~95%的冷库中贮藏。 In order to study the long-term humidicool storage technology of Huangguan pears after the treatment with ozone, the fruits were picked by 5 batches from August 3 -31 in 2011 (every 7 days for one time), and treated with 4 ozone concentrations (0, 30, 60 and 90 mg/m3 , with no ozone treatment as CK) after preeooling 24 h under the condition of room temperature, then storaged in the refrigerator with the temperature of - 1 - 1℃ and relative humidity 85% - 95%. The effects of different ozone concentrations on the appearance quality and internal quality (hardness, total sugar and titratable acid content) of different batches of Huangguan pear after humidicool storage were studied. The results showed that the total sugar and titratable acid contents of the fruits which picked in August 24 at the end of storage were higher, and the hardness of that was moderate. The fresh- keeping effect of fruits which storaged in the refrigerator after treated by 30 mg/m3 of ozone was better, and the fruit jizhua disease of that was reduced. The fresh-keeping technology measures of Huangguan pear was preliminarily determined, the fruits were picked around August 24, wrapped with foam soft net and layered into the fruit box with vinyl bag lining after preeooling 24 h under the condition of room temperature, then storaged in the refrigerator with the temperature of - 1 - 1℃ and relative humidity 85% -95% after treated by 30 mg/m3 of ozone.
