摘要
对用特种红曲酿制啤酒进行了试验 ,采用红曲米作糖化辅料 ,利用其天然色泽和酶系 ,制成一种色泽独特的有一定保健功能的啤酒。
A brewing method of beer using special red koji rice as saccharification supplementary material was studied.A new type of beer with special color and certain healthy function was developed using the native color and enzyrnatic system of rcd koji ricc.
