摘要
嗜盐微生物是一种重要的微生物资源,在我国传统食品加工工艺中有着重要的地位,与食品及食品原料贮藏加工有密切关系。该文对现有研究发现的嗜盐微生物的特性及与产品质量关系的进行了总结,对该领域存在的问题和不足进行了分析,对下一步可能的研究方向进行了预测,为更好开发这种特殊微生物资源打下基础。
Halotolerant microorganisms is an important kind of microbial resources. It plays an important role in traditional food processing technology, and was closely related with food and food raw materials storage and processing. In order to lay the foundation for the better development of this particular microbial resources, based on existing research discovery of halotolerant microorganisms characteristics and product quality relations were summarized, the problems and shortcomings were analyzed, the possible research directions were also predicted.
