摘要
以乙醇为浸提溶剂提取宁夏枸杞色素,分析了色素得率和色素溶液的特征吸收波长,在此基础上研究枸杞色素的稳定性。研究结果表明提取所得枸杞色素得率为49.1%,以无水乙醇为参比,枸杞色素的特征吸收波长为395 nm;枸杞色素对温度、时间、pH、AlCl_3溶液、自然光照等具有较好的稳定性,可作为食品、医药、保健品及饮料等生产行业的色素添加剂。
Based on the extraction with ethanol solvent the yield rate, absorption peak and the stability of the Lycium pigment were studied. Results showed that the yield rate of the Lycium pigment was up to 49.1% and the absorption peak of the ethanol-pigment-solution exists at 395 nm. The Lyeium pigment was stable under the condition of different temperature, time, pH, A1C13, and the nature light. So the Lyeium pigment can be used as pigment additive in food, medicine, healthy production and drink.
