摘要
测试了牡丹花红色素的光谱和理化性质。结果显示,牡丹花红色素在酸性和中性条件下最大吸收波长为526.5nm,不同溶剂的酸性色素溶液的最大吸收波长有微小的波动,但在花青素特征峰变动范围之内。色素易溶于水和酒精,难溶于石油醚和乙醚,可以确定牡丹花色素为花青素类色素。提取牡丹花红色素适宜的浸取剂为盐酸体积分数为1%的酸性无水乙醇,浸取温度50℃,浸取时间3h。
A red pigment was isolated from the peony flower. It is soluble in water and ethanol,it is difficulty to dissolve in ether. The maximum absorptive peak of ultraviolet-visible spectrogram of the pigment is at 526.5 nm. By means of the absorptive spectrogram and qualitative determination,the structure of red pigment of peony flower was probably similar to the structure of the anthocyanins pigment. The conditions including solvent,marinating time and temperature and pH of solvent for extracting pigments from peony flower were studied. The optimum conditions were. extraction reagent 15 HCl-ethanol (V/V), temperature 50℃, extraction time 3 hours.
