双孢菇真空冷冻干燥产品工艺技术研究 被引量:7

摘要 采用DSC差示热量设备找到双孢菇的共晶点从而确定预冻温度,利用单因素试验探讨比较了切片厚度、预冻温度、预冻时间、冻干时间对冻干双孢菇复水性的影响,利用正交试验确定了双孢菇真空冷冻干燥最佳工艺参数为:切片厚度4 mm,预冻温度-40℃,预冻时间4 h,冻干时间14 h。通过冻干前后产品性状和营养成分的分析比较,结果表明:冻干产品较充分地保留了双孢菇的形、色、鲜、香等性状和营养成分,具有良好的复水性。 The eutectic point was found by DSC to determine the pre-freezing temperature of agaricus bisporus. The single factor experiment was used to compare the influence over rehydration of freeze-drying Agaricus bisporus exerted by the material thickness, prefreezing temperature, prefreezing time, as well as freeze-drying time. Orthogonal design was applied to obtain the best combination of process parameters. They are as follows: the material thickness is 4 mrn, pre-freezing temperature is -40 ~C, prefreezing time is 4 h, and freeze-drying time is 14 h. A comparison of the products' quality and nutrition before and after freeze drying indicates that characters such as shape, colour, taste and nutritional ingredients of dehydrated Agaricus bispoms can be fidly retained, and its rehydration is good.
