摘要
以双孢蘑菇(Agaricusbisporus)为实验材料,分别测定其在(3±1)℃,(10±1)℃,(17±1)℃以及室温(30℃)等四种温度下贮藏过程中的失重率、呼吸强度、多酚氧化酶活力和总糖等生理指标。结果表明,(3±1)℃低温可明显降低失重率,推迟呼吸跃变出现的时间,并能降低呼吸峰值,同时低温处理还能降低PPO活力,延缓双孢蘑菇中可溶性总糖损失的速度。此外,根据RI和贮藏时间的关系曲线,可以确定双孢蘑菇为呼吸跃变型蔬菜。
With Agaricus bisporus as the experiment material, physiology indexes such as weight loss, respiratory intensity, PPO activity and total sugar content were studied under (3±1)℃, (10±1)℃, (17±1)℃ and CK(30℃).Experiment results showed that: (3±1)℃ low temperature can evidently reduce weight loss, respiratory intensity, PPO activity and degree of total sugar content decrease, respiration range was reduced at the same time ,furthermore,from Rl -Storage time curve,we can see that Agaricus bisporus belongs to climateric respiratory vegetable.
